Banana and Nut Bread



2 eggs
50 ml oil
120 g (150 ml) Huletts White Sugar
280 g (500 ml) cake flour
2 ml bicarbonate of soda
2 ml salt
15 ml baking powder
125 ml apple juice
250 ml mashed banana
(± 4 bananas)
100 g pecan nuts,chopped




  1. Preheat oven to 180ºC.
  2. Beat the eggs and oil, add sugar and beat until well blended.
  3. Add the sifted dry ingredients alternatively with the apple juice, and mix well.
  4. Stir in the mashed banana and nuts.
  5. Spoon mixture into a greased bread pan 26 x 9 x 7 cm and bake for 55-60 minutes or until testing skewer comes out clean.
  6. Remove from oven and leave to rest in pan for 5 minutes.
  7. Turn out onto wire rack to cool completely.

Hint: The flavour of banana bread develops over time and the taste is usually the best on the second day. Banana bread and a pot of coffee! There's nothing better...
