Basic Pound Cake


The classic pound cake, although with many variations, remains one of the all time favourites. Originally all the main ingredients were measured in pounds.



250 g butter
250 g (300 ml) Huletts Castor Sugar
5 ml vanilla essence
4 extra large eggs
250 g (450 ml) cake flour
60 ml milk



  1. Preheat oven to 160ºC.
  2. Lightly grease a 20 cm round cake pan and line the base and sides with non-stick baking paper.
  3. Place butter, castor sugar and vanilla essence in bowl of an electric mixer and beat for 10 minutes or until light and creamy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Fold in the flour and beat lightly to combine.
  6. Fold through the milk.
  7. Spoon in the mixture and bake for 45-50 minutes until cooked when tested with a skewer.
  8. Allow to cool in pan.
  9. Turn out.
