Carrots with Sweet Orange Sauce
Serves 4 - 6
400g medium to small sized carrots, trimmed and peeled
- Cook the carrots in boiling water until just tender. Remove from pot and discard water.
- Using the same pot, melt the butter and add the orange juice and sugar. Stir continuously until the mixture becomes syrupy.
- Add the carrots and reduce heat to low. Cook for a further 15-20 minutes, gently stirring to evenly coat the carrots.
- Serve as a side dish garnished with the sprouts leaves.
