
Chilled Fruit Salad with a Ginger-and-Mint Dressing

Ingredients: Ingredients80g (100ml) Huletts White Sugar125ml water 10ml fresh ginger, finely chopped 30ml fresh lime or lemon juice 45ml fresh mint, chopped 1 medium sized pineapple, peeled and sliced 2 mangoes, peeled and sliced 12-16 nectarines, stoned and sliced into wedges |

Method
- Place the sugar, water and ginger in a saucepan and boil gently for 10 minutes.
- Add the lime juice and boil for further 5-10 minutes, or until it is the consistency of a light syrup.
- Remove the saucepan from the heat; add the mint, cover, and leave to infuse for 1 hour.
- Dress the fruit with the syrup and chill until you are ready to serve.
