French toast with Bacon and Cream Cheese Filling

2 extra-large eggs, lightly beaten
100ml milk
10ml (2t) vanilla essence
30ml (2 T) Huletts Castor Sugar
50g cream cheese
30ml (2T) Huletts Icing Sugar
4 slices day old white bread
25g butter
Sliced banana
A sprinkling of cinnamon
Huletts Maple Syrup or Huletts Molasses
A dollop of cream cheese
Crisply fried bacon strips
Mint or other decorative leaves


  1. Whisk the eggs, milk, vanilla essence and sugar together in a large bowl. The bowl must be large enough to be able to dip the bread.
  2. Beat the cheese and the icing sugar together until spreadable.
  3. Spread the cheese onto 2 slices of bread and sandwich together with remaining slices.
  4. Submerge the sandwich into the egg mixture and allow to soak up mixture for +/- 30 seconds.
  5. Melt the butter in a large frying pan until foaming. Fry the sandwiches for 3-4 minutes on each side until golden brown and slightly puffed.
  6. Cut into triangles and sprinkle with cinnamon, serve with sliced banana, maple syrup or molasses, a dollop of cream cheese and crisply fried bacon strips. Garnish with mint leaves and serve.
