Pineapple and Citrus Lemonade

Makes ± 2 litres

Ingredients: 

1 pineapple

2 oranges or grapefruit

250 ml (1 cup) water

30 ml (2 T) Huletts White Sugar

500 ml (2 cups) fresh pineapple juice, chilled

1 litre lemonade, chilled

extra pineapple slices, fresh mint and lime slices, to garnish, optional

Method: 
  1. Peel and cube the pineapple.
  2. Peel and cube citrus, removing all the white pith.
  3. Place cubed fruit, water and sugar in a saucepan and simmer for about 15 minutes, until the pineapple is soft.
  4. Liquidize and chill.
  5. To serve, mix the chilled fruit pulp, pineapple juice and lemonade together in a large mixing bowl or jug. Serve over ice, garnished with pineapple slices, fresh mint leaves, and lime slices, if desired.
