800g large fresh strawberries
- Preheat the oven to 180ºC.
- Line a roasting pan with non-stick greaseproof baking paper or spray with cooking spray.
- Cut the strawberries in 1cm thick slices and arrange, in single layer, on the roasting pan.
- Sprinkle with castor sugar.
- Roast for 30 minutes to an hour depending on your taste preference.
- Serve topped with a dollop of Mascarpone or good vanilla ice cream, a splash of vanilla liqueur and chopped pistachios (optional).
