Makes ± 2 litres
1,5 kg firm ripe pears
- Peel the pears, cut in half and core.
- Bring the water to the boil and add cloves, ginger, vinegar, brown sugar and cinnamon stick.
- Place pears in syrup and poach together for 10 minutes.
- Remove pears with a slotted spoon and pack into sterilised jars.
- Boil the liquid for another 20 minutes.
- Pour over pears to cover, seal.
Delicious with cheese or pork.
