Summer Salad: A Traditional Greek Salad

Serves 6 - 8



6 x 125g Clover Feta, flavour of your choice, broken into large chunks
2 green peppers, deseeded and sliced
1 cucumber, peeled and sliced
Handful of Kalamata olives
5 ripe tomatoes, quartered
1 small red onion, sliced
1 t dried oregano
45-60ml extra virgin olive oil
45-60ml red wine vinegar
pinch Huletts Sugar
salt and black pepper to taste



  1. Combine all the salad ingredients.
  2. Mix the oregano, oil, vinegar, sugar, salt and pepper in a jar. Shake and dress the salad just before serving.
