Vanilla Cake with Granadilla Cream Cheese Topping



4 eggs
300 ml (250 g) Huletts Castor Sugar
500 ml (280 g) flour
15 ml baking powder
250 ml full cream Milk
100 g Clover Butter
5 ml vanilla essence

Granadilla Cream Cheese Topping:
125 g smooth cream cheese
100 g Clover Butter
30 ml granadilla pulp
500 ml Huletts Icing Sugar



  1. Preheat oven to 180ºC.
  2. Beat eggs and castor sugar together until thick and creamy.
  3. Sift the flour and baking powder together and fold into egg and sugar mixture.
  4. Heat milk and butter, but do not boil.
  5. Add vanilla essence.
  6. Stir into batter.
  7. Spoon into a large greased ring cake pan or two greased cake pans.
  8. Bake for 25-30 minutes.
  9. Allow to cool.
  10. In the meantime, mix butter and cream cheese, add granadilla pulp.
  11. Add icing and mix well until smooth.
  12. Pour granadilla topping over cake or use as icing in between layers and on top.
