Sweet Ginger Bread



500ml (2 cups) Cake Flour
10ml (2t) Ground Ginger
5ml (1t) Ground Mixed Spice
5ml (1t) Ground Cinnamon
5ml (1t) Bicarbonate of Soda
2ml ( ½t) Salt
125g ( ½ cup) Margarine
125ml ( ½ cup) Huletts Golden Syrup
125ml ( ½ cup) Huletts White Sugar

125ml ( ½ cup) Boiling Water
1 Egg, beaten



  1. Sift the flour, spices, bicarbonate of soda and salt together.
  2. Mix the margarine, syrup, sugar and boiling water together, stirring to dissolve the sugar.
  3. Stir the two mixtures together and then add the beaten egg.
  4. Pour the batter into a greased and lined loaf tin and bake at 180°C for 55 minutes or until a skewer inserted into the centre comes away clean. Place on a wire rack to cool.
