Melba Sauce



250 g Fresh Berries OR Drained Frozen Berries
15–45ml (1–3 T) Huletts Icing Sugar, according to taste
30 ml (2 T) Berry Liqueur OR Brandy OR Any Berry Juice
15 ml (1 T) Grand Marnier



  1. Purée berries and liquid in a food processor until smooth.
  2. Sweeten to taste by stirring in sifted icing sugar.
  3. Chill until ready to serve.

Serving Suggestions: Although Melba sauce is traditionally served over poached peaches, it may also be served with ice cream, mousses, sweet pies and tarts, or pancakes/crepes.
