Cucumber with Dill & White Vinegar
Makes ± 750 ml
200 ml white vinegar
50 g (¼ cup) Huletts White Sugar
30 ml (2 T) mustard seeds
15 ml (1 T) black peppercorns
10 ml (2 t) salt
1 large cucumber, peeled and sliced diagonally into wedges
30 ml (2 T) fresh dill, chopped
- Boil the vinegar, sugar, mustard seeds, peppercorns, and salt together for 3 minutes.
- Leave to cool. Pour the mixture over the cucumber slices and sprinkle with the chopped dill.
- Leave to marinate in the refrigerator for at least one hour. Sprinkle with extra chopped dill, if desired, and serve.
Hint: Delicious as a pickle on hamburgers, or as an accompanying salad, or as an ingredient in a Greek salad.
