Cucumber with Dill & White Vinegar

Makes ± 750 ml

200 ml white vinegar
50 g (¼ cup) Huletts White Sugar
30 ml (2 T) mustard seeds
15 ml (1 T) black peppercorns
10 ml (2 t) salt
1 large cucumber, peeled and sliced diagonally into wedges 
30 ml (2 T) fresh dill, chopped
  1. Boil the vinegar, sugar, mustard seeds, peppercorns, and salt together for 3 minutes.
  2. Leave to cool. Pour the mixture over the cucumber slices and sprinkle with the chopped dill.
  3. Leave to marinate in the refrigerator for at least one hour. Sprinkle with extra chopped dill, if desired, and serve.

Hint: Delicious as a pickle on hamburgers, or as an accompanying salad, or as an ingredient in a Greek salad.
