Serves 4 -6



4 x 250ml Homemade Tomato Sauce , at room temperature (or as desired)
1 medium-sized cucumber, peeled deseeded and chopped
2-3 shallots
2 green or red peppers, finely chopped
Salt and freshly ground black pepper, to taste
Fresh basil or parsley for garnishing and extra flavour



  1. Mix the ingredients together.
  2. Spoon into individual soup bowls, garnish with chopped fresh basil leaves or finely chopped parsley.
  3. If tomato sauce is too thick, water down with a little bit of cold water.

Hint: Serve with warm crusty bread drizzled with olive oil. Ideal as a starter to a braai.
