Skinny Mojito with Pineapple

Serves 1

1 Huletts EquiSweet sachet of your choice
1 sprig fresh mint
½ fresh pineapple, cubed
½ lime, pips removed and sliced into wedges
15 ml (1 T) white rum, if desired
soda water, refrigerated
a sprig of fresh mint to garnish
  1. Combine the EquiSweet, mint, pineapple, and lime wedges in a serving glass.
  2. Using a wooden spoon, lightly squash the ingredients together.
  3. Add the rum and fill the glass with crushed ice and top up with soda water.
  4. Garnish with the sprig of mint and serve immediately.
