Huletts Sugar

Huletts SunSweet Brown Sugar is the first dry sugar crystallised from sugar cane sap. It is light brown in colour, and most often used in hot beverages, cereals, porridges and everyday baking. It is the most popular choice for home brewing, canning and making confectionery products.

Speciality Brown Sugars

Huletts Speciality Brown Sugars are ideal for flavour and colour enhancement in recipes such as baked fruit cakes, biscuits, homebrewed beer, ginger beer; and preservers like pickles and chutney.

Huletts Treacle Sugar is based on SunSweet Brown Sugar but contains more molasses, which makes it stickier, darker and stronger in flavour. When used, Treacle Sugar gives a special texture to baked products and protects them from firming and drying out during storage. Huletts Treacle Sugar may be used for fruit cakes, chocolate fudge cupcakes, bran muffins and many other tasty recipes.

Huletts Caramel Sugar is basically SunSweet Brown Sugar with a small amount of caramel colour, which makes it slightly darker. Our Caramel Sugar is used for biscuits and cakes that require slightly stronger colours & flavours – like wholewheat scones, wholewheat loaves and Christmas fruit cakes.

Baking Sugars

Huletts Equisweet Classic

Huletts EquiSweet Classic sachets are ideal for use in hot and cold beverages, cereals or porridge, and for sprinkling over fruit and yoghurt. 1 sachet of Huletts EquiSweet Classic is equivalent in sweetness to 2 teaspoons of sugar, yet contains only 16 kJ, compared to 2 level teaspoons of standard sugar (10g) which contains 170 kJ.

One of the most popular products in our low-kilojoule sweetener range is Huletts EquiSweet with Sucralose – available in sachet and tablet formats. Huletts EquiSweet with Sucralose adds value to the Huletts range by providing an aspartame-free alternative with the same great taste.

Sugar Substitutes

Xylitol and Erythritol

Xylitol and Erythritol are part of a range of sugar alcohols, or polyols but neither of them are sugars nor alcohols. They provide a sweet taste with fewer kilojoules than table sugar. They are carbohydrates that chemically have characteristics of both sugars and alcohols. However, sugar alcohols do not contain the type of alcohol found in alcoholic beverages.

Huletts EquiSweet Erythritol is a low GI and low kilojoule sweetener derived from a variety of fruits and vegetables. Among the sugar alcohols, it has a higher digestive tolerance because about 90% of the ingested Erythritol is readily absorbed and excreted in urine. Its kilojoule value is therefore close to zero, hence it’s considered a low kilojoule sweetener as opposed to Xylitol whose kilojoule levels are not low enough to be legally called a low kilojoule sweetener. Erythritol Sweetener is 60-80% as sweet as sugar. Among the sugar alcohols, Erythritol exhibits many unique features. Erythritol has a higher digestive tolerance compared to all other sugar alcohols because about 90% of the ingested Erythritol is readily absorbed and excreted unchanged in urine. Because 90% is excreted, its kilojoule value is close to zero and it is considered a low kJ sweetener while xylitol is considered a reduced kJ sweetener.

Huletts EquiSweet Xylitol is a low GI sweetener derived from maize corncob fibres and contains no added additives. It is slowly and partially absorbed and metabolised, resulting in very negligible changes in blood glucose levels. Xylitol Sweetener is just as sweet as sugar. It has a reduced kilojoule value which can be helpful in weight control and managing diabetes. It has 40% less kilojoules than sugar. (One teaspoon of sugar contains 67 kJ versus 42 kJ from xylitol). Xylitol is slowly and only partially absorbed in the intestine and too much can cause digestive symptoms such as diarrhoea.

Huletts Molasses

Huletts Molasses is traditionally used in baking and cooking, but it can also be used over your daily cereal or porridge, as a spread for crackers or it can be added to smoothies. Huletts White Sugar

Larger crystals, pure white colour

For general use in pastry, cakes and loaves, biscuits and bread.

You can use castor sugar for all the same applications as you would for standard White Sugar. You can also use Sunsweet Brown sugar but there may be some flavour differences in the finished product

Huletts Castor Sugar

Finer crystals, pure white colour

For general use in pastry, cakes and loaves, meringues, biscuits and bread and products such as apple tartlets, chiffon cake and hot cross buns. Also used for decoration and in products where it is consumed in its crystalline form and where standard white sugar would give a coarse feel on the tongue

You can use standard White Sugar to replace Castor Sugar in some applications but the coarser crystals may affect the mouthfeel of the product 

Huletts Icing Sugar

Sugar that has been ground into a fine powder. It contains a small amount of corn starch to prevent it from lumping 

Used mainly for icing cakes and decoration. There is no point in using icing sugar in products where it is simply going to be included in a dough or batter for baking.

Difficult to replace as the fine powder imparts particular characteristics to the products in which it is incorporated

Huletts Sunsweet Brown Sugar

Pale brown raw sugar that contains a small amount of molasses. This imparts a characteristic bittersweet flavour to the sugar

Used where it gives its characteristic flavour to certain cakes, biscuits and rusks. It may be used for chocolate mud cake, ginger bread, fruit loaves, peanut butter biscuits, brandy snaps, health muffins, health rusks, breads, including rye bread, and macaroons

You can use standard white sugar if you are prepared to accept a slight flavour change in the product. If you want to retain the characteristic colour of brown sugar, rather use Caramel Brown Sugar 

Huletts Caramel Brown Sugar

Similar to Huletts Sunsweet Brown Sugar but with a small amount of caramel colour added to it and it consequently has a slightly darker colour than standard Sunsweet Brown Sugar.

Used where the characteristic flavour of Sunsweet Brown Sugar along with a more intense brown colour is required. Huletts Caramel Sugar is used for biscuits and cakes that require colour and flavour, such as whole-wheat scones, whole-wheat loaves and Christmas fruit cakes

If you specifically need the darker colour then use a mixture of Sunsweet Brown Sugar and Treacle Sugar. However remember that the Treacle Sugar has a strong flavour so only use a small amount of it in the mixture 

Huletts Yellow Sugar

Similar to Huletts Sunsweet Brown Sugar but has a small amount of yellow colour added to it 

Used where the yellow colour is needed in addition to the characteristic flavour of Sunsweet Brown Sugar. It can be used in apple strudel and for preserves such as jams, pickles and chutney

If you specifically need the yellow colour, use Sunsweet Brown Sugar, just add a few drops of yellow food colour to your mixture to give the right appearance

Huletts Treacle Sugar

Similar to Huletts Sunsweet Brown Sugar but contains a higher level of molasses. This gives it a darker colour, a stronger flavour and a slightly sticky texture

Because of the higher molasses content it gives a somewhat different texture and a darker colour to the baked products in which it is used and is also helps with reducing the tendency of baked products to firm and dry out on storage. It may be used for products such as fruit cakes and chocolate fudge cupcakes. It may also be used in microwave baking

Difficult to replace but you can use any other Huletts sugar and try adding a small amount of Huletts Molasses to your recipe. The molasses has a very strong flavour so you will only need a little of it.
