Ingredients

  • 2 Cups Maize Meal
  • 500ml Cold Water
  • 3L Hot Water
  • 1 Cup Huletts White Sugar
  • 2 Tbsp Wheat Flour

Method

  1. Mix the maize meal and cold water inside a pot until smooth.
  2. Place on high heat and gradually add all the hot water while stirring.
  3. Once the mixture begins to boil, close the lid and reduce to low heat.
  4. Allow simmering for 45 minutes, stirring frequently.
  5. Remove from heat, stir in the sugar and allow to cool completely.
  6. Add wheat flour and mix well.
  7. Place in an airtight container and allow to ferment for 3 days.
  8. After fermentation, refrigerate.
  9. Serve chilled.

Solid recipe, though it could benefit from clarification on whether to incorporate sugar and flour into hot or cold porridge.

Don’t forget to add a Starter. Starter is 500ml of ready made amahewu with white cake flour.

Add it to cooled mealie meal porridge.

Enjoyable served chilled in a hot South African summer day. Low or minimum calories accommodating most diet including the diabetes melitus people ( obvious by reducing a cup to half.

Based on my experience almost all of the ingredients are readily available 24/7 in every household. This is the most fact when it comes to new receipts and affordability of course is playing the part. I must say I truly enjoy this classic-magogo recipe- I have been orientated by my late gogo. We use to dri k them after school but now Hullets has unknot the secret I am starting to enjoy the self made African thirst quencer. Thanks once again.
