Apple and blueberry Galette

Our delicious Apple and Blueberry Galette is amazing with tea!

Ingredients

3 cups cake flour

  • Pinch salt
  • 2 Tbs Huletts castor sugar
  • 225g cold butter, cubed and chilled
  • 1 egg
  • 6 Tbs ice cold water

Filling:

  • 4 golden delicious apples, peeled and sliced
  • 1 cup fresh blueberries
  • ¼ cup Huletts brown sugar
  • 2 tsp ground cinnamon
  • ½ tsp vanilla seeds

Topping:

  • ¼ cup cake flour
  • 1 tsp ground cinnamon
  • 1/8 cup Huletts brown sugar
  • 30g butter, chilled and diced

Method

  1. Preheat oven to 180C.
  2. Mix together the flour, salt and sugar.
  3. Rub in the butter until the mixture resembles breadcrumbs.
  4. Mix in the egg and enough water to make a pliable dough.
  5. Roll the dough out into a large circle about 3mm in thickness.
  6. In a bowl, mix together the apples, blueberries, brown sugar cinnamon and vanilla.
  7. Place fruit into the centre of the pastry circle then fold in the edges to form a rough tart – the filling should still be exposed in the middle.
  8. Rub together the flour, cinnamon, brown sugar and butter then sprinkle onto the galette.
  9. Bake at 180C for 45 minutes or until the pastry is golden brown and crispy.
  10. Serve with a dollop of whipped cream.

Top tips

Freeze fruit the right way…

Coat your fresh fruit with a layer of sugar before freezing, or freeze them in sugar syrup.

BUTTER: DO NOT Microwave

Rather, thinly slice and cut into different lengths to make creaming easier.
