Old School Apple & Mustard Glazed Ham

Ingredients

  • 750ml apple juice
  • 750ml water
  • 1 cup Huletts Brown Sugar
  • 250ml red wine vinegar
  • 6 Tbsp mustard powder
  • 1 x 2 kg smoked gammon, scored
  • Apples, thinly sliced (to garnish)

Method

  1. Preheat the oven to 220C.
  2. Place the apple juice, water, sugar, vinegar and mustard powder in a medium saucepan over high heat and stir until the sugar has dissolved. Bring to the boil and cook for 30 minutes or until reduced. Remove from the heat and stir to combine.
  3. Place the gammon, top side down in a roasting tray. Pour the glaze over and roast for 40 minutes. Remove from the oven and reduce the oven temperature to 200C. Turn it over, baste with the glaze and roast for a further 15 minutes or until golden, remove from the oven one last time and arrange the thinly sliced apple on the gammon, baste and roast for 10 more minutes.
  4. Remove the gammon from the roasting tray and place on a platter. Brush the remaining glaze over before carving to serve.
