Baked Golden Syrup Pudding with a Citrus Twist

Ingredients

Batter

  • ⅓ cup (80 ml) milk
  • ⅓ cup (80 ml) fresh orange juice
  • 125 g (125 ml) butter
  • 2 cups (500 ml) cake flour
  • 1 Tbsp (15 ml) baking powder
  • 4 eggs
  • 2 tsp (10 ml) vanilla essence
  • 1 Tbsp (15 ml) finely grated orange rind
  • 200 ml Huletts Castor Sugar

Syrup

  • 1 cup (250 ml) fresh orange juice (the juice of about 3 medium oranges)
  • 100 g (100 ml) butter
  • 150 g (100 ml) Huletts Golden Syrup
  • rind of 1 medium orange, removed with a citrus zester or remove thick strips of rind with a veggie peeler and cut into thin strips
  • extra Huletts Golden Syrup for serving

Method

Batter

  1. Preheat oven to 180°C and lightly grease a 28-30 cm round pie dish.
  2. Place milk, orange juice and butter in a saucepan and heat over a low temperature to melt the butter. Set aside.
  3. Sift flour and baking powder together in a bowl.
  4. Place eggs, vanilla and orange rind in a separate bowl, and beat with an electric beater until light and fluffy. Gradually add castor sugar and beat well after each addition, until the mixture is light and creamy.
  5. Add half of the flour mixture to the egg mixture and beat well. Add half of the milk mixture and beat well. Repeat with remaining flour and milk and beat to form a runny batter.
  6. Pour batter into the prepared pie dish and bake for 25-30 minutes or until a cake tester or skewer comes out clean. Prick the hot pudding all over with a fork as soon as it comes out of the oven.

Syrup

  1. Meanwhile, place all the ingredients, except the extra golden syrup, in a small saucepan and heat over a low temperature until the butter is melted. Allow to simmer for a few minutes.
  2. Pour the hot syrup evenly over the pricked warm pudding. Loosen the sides of the pudding from the dish to allow the sauce to seep in. Allow the syrup to be absorbed completely.
  3. Serve warm with scoops of ice cream or plain yoghurt. Drizzle the ice cream or yoghurt with extra golden syrup, if preferred, and serve immediately.

Serving suggestion

  1. Season plain yoghurt with finely grated orange or lemon rind to taste and enjoy as an alternative to ice cream.
