This is a great “make ahead and freeze” recipe for those days when you do not have time to cook. It is also suitable as a dinner party dish as the cooking time allows you plenty of time to attend to your guests and still delight them with a delicious meal.
BEEF & ONION HOT POT
Chase away the chill and warm up your taste buds with a hearty Beef and Onion hotpot.

Ingredients
- 30 ml olive oil
- 3 bay leaves
- 1 kg beef cubes
- 1 large onion, sliced
- 30 ml cake flour
- 15 ml Bovril
- 250 ml water
- Salt and pepper
- 250 g carrots, sliced
- 15 ml parsley, chopped
- 100 g dried prunes, soaked and stoned (optional)
- 10 ml Huletts Brown Sugar
Method
- Preheat the oven to 150°C.
- Heat the oil in an ovenproof pot and add the bay leaves. Let them crackle, but keep the lid of the pot on to prevent them from popping out.
- Add the beef cubes and fry until brown.
- Add the onions and cook until they are golden.
- Sprinkle the flour over the beef and onions and let it brown.
- Add the Bovril and water. Should you need a little extra liquid, add just enough water to cover the meat.
- Season to taste with salt and pepper.
- Add the carrots and parsley.
- Place the lid on the pot and braise in the oven for about 2 hours.
- Stir at least once and add a little more liquid if it looks like it is drying out.
- About half an hour before the meat has finished cooking, stir in the prunes and brown sugar. Return to the oven to finish cooking.
