BEEF & ONION HOT POT

Chase away the chill and warm up your taste buds with a hearty Beef and Onion hotpot.

Ingredients

  • 30 ml olive oil
  • 3 bay leaves
  • 1 kg beef cubes
  • 1 large onion, sliced
  • 30 ml cake flour
  • 15 ml Bovril
  • 250 ml water
  • Salt and pepper
  • 250 g carrots, sliced
  • 15 ml parsley, chopped
  • 100 g dried prunes, soaked and stoned (optional)
  • 10 ml Huletts Brown Sugar

Method

  1. Preheat the oven to 150°C.
  2. Heat the oil in an ovenproof pot and add the bay leaves. Let them crackle, but keep the lid of the pot on to prevent them from popping out.
  3. Add the beef cubes and fry until brown.
  4. Add the onions and cook until they are golden.
  5. Sprinkle the flour over the beef and onions and let it brown.
  6. Add the Bovril and water. Should you need a little extra liquid, add just enough water to cover the meat.
  7. Season to taste with salt and pepper.
  8. Add the carrots and parsley.
  9. Place the lid on the pot and braise in the oven for about 2 hours.
  10. Stir at least once and add a little more liquid if it looks like it is drying out.
  11. About half an hour before the meat has finished cooking, stir in the prunes and brown sugar. Return to the oven to finish cooking.

Make ahead & Freeze

This is a great “make ahead and freeze” recipe for those days when you do not have time to cook. It is also suitable as a dinner party dish as the cooking time allows you plenty of time to attend to your guests and still delight them with a delicious meal.
