Butter Chicken & Dumplings

Ingredients

Dumplings

  • 2 cups self-raising flour (or 2 cups cake flour and 2 teaspoons baking powder)
  • 1 tsp salt
  • 1 cup full cream milk

Butter Chicken

  • 76 g butter
  • 150 g chopped onion
  • 1 Tbsp crushed garlic
  • 1 Tbsp fresh grated/ powdered turmeric
  • 1 Tbsp fresh grated ginger
  • 1 Tbsp medium curry powder
  • 1 Tbsp garam masala
  • ½ cup tomato paste
  • ¼ cup Huletts White Sugar
  • 1 cup raw cashew nuts - roughly chopped
  • 2 cups cream
  • 740 g deboned chicken thighs, chopped into even-sized pieces
  • Salt to taste

Method

Dumplings

  1. Sieve the dry ingredients together.
  2. Add milk to dry the ingredients whilst stirring constantly until all ingredients are well combined. Don’t overwork the dumpling mix as it will make them dense and heavy.
  3. Allow the dumpling mix to rest while you make the butter chicken.

Butter Chicken

  1. In a saucepan, melt the butter over low to medium heat and sauté the onions. Add the garlic, turmeric, ginger, curry powder, garam masala, tomato paste, and sugar, and continue to sauté over low heat for 5-10 minutes
  2. Add the cashew nuts and cream and mix well. Simmer for another 5 minutes and add the cubed chicken.
  3. Reduce heat and simmer for 10 - 15 minutes, or until chicken is cooked through season with salt to taste.
  4. Drop a tablespoonful of dumpling mixture into the butter chicken and cover with the pot lid to steam the dumplings.
  5. Turn dumplings around after 6-8 minutes per side or until cooked through.
  6. Remove from heat and serve.
