Ingredients
Kofta
- 8 wooden skewers
- 500 g chicken mince
- 1 Tbsp ground cumin
- 1 Tbsp ground coriander
- 1 Tbsp garlic powder
- 1 tsp cayenne pepper
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Huletts Yellow Sugar
- 2 spring onions, finely chopped
- 2 Tbsp chopped fresh coriander
- 2 Tbsp chopped fresh parsley
- 2 tsp olive oil
Chutney
- 300 g peaches peeled & diced
- 1 onion, finely chopped
- ½ tsp chilli flakes
- ½ tsp mustard powder
- 150 g Huletts Caramel Sugar
- 200 ml apple cider vinegar
- 1 tsp ground coriander
- 1 tsp ground cinnamon

Method
Kofta
- Soak wooden skewers in cold water for 10 minutes.
- In a bowl, combine chicken mince, spices, sugar, spring onions, and herbs.
- Mix until well combined.
- Divide the mixture evenly into 8 balls.
- Skewer each meatball onto the soaked wooden skewers, then flatten slightly.
- Drizzle with oil, then cook in a griddle pan until golden on each side and cooked through.
Chutney
- Combine all ingredients in a saucepan.
- Stir over low heat until sugar dissolves.
- Increase heat to medium then simmer for about 15-20 minutes, stirring regularly, until reduced and thickened.
- Leave to cool to room temperature before serving.
Serving Suggestion
- Serve with salad leaves and tortilla wraps.
