Chicken & Prawn Coconut Curry

Try this Prawn Curry for an adventurous balance of spice and flavours.

Ingredients

For the naan bread

  • 200-250 ml yoghurt
  • 5 ml salt
  • 240 g flour
  • 10 ml baking powder
  • Melted butter

For the curry:

  • 30 ml sunflower oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 10 ml fresh ginger, grated
  • 5 g lemon grass, bruised
  • 10 ml ground cumin
  • 10 ml mild masala curry powder
  • 10 ml paprika
  • 10 ml chilli powder
  • 10 ml ground coriander
  • 500 g chicken fillets, cubed
  • 2 sachets of tomato paste
  • 30 ml Huletts Brown Sugar
  • 10 ml chicken stock powder
  • 1-2 cans coconut milk
  • 250 g cleaned prawn tails

To serve:

  • Shaved coconut
  • Fresh coriander
  • Basmati rice
  • Sambals

Method

The Naan

  1. Mix the yoghurt, salt, flour and baking powder to form a dough.
  2. Once you have a smooth dough, being careful not to over mix, divide it into equal pieces. Using your hands or a rolling pin, shape them into oval shaped flatbreads.
  3. Cook for 2-3 minutes on each side over a medium heat and brush with the melted butter while still warm.

The Curry

  1. Fry the onion in the oil until soft, then stir in the garlic, ginger and lemongrass. Add all the additional spices and fry off for a few minutes.
  2. Stir in the chicken until it is coated in the spice mixture and well browned.
  3. Add the tomato paste, sugar and chicken stock and stir.
  4. Add 1 can of coconut milk.
  5. Simmer, uncovered, for 15-30 minutes or until the chicken is cooked through. Add the prawn tails about 10 minutes before the chicken is cooked.
  6. Add salt and pepper if necessary.
  7. If the curry is too dry, a little extra coconut milk can be added at this stage.
  8. Top the curry with shaved coconut and fresh coriander and serve with basmati rice, naan bread and sambals.

Top tips

Keep it clean.

Avoid bacteria buildup on your cutting board. Cut a lemon in half and coat the exposed side with coarse salt. Then, use it to scrub your cutting board and rinse clean.

Just a pinch!

Adding a pinch of sugar to dishes containing tomatoes will counteract the acidity of the tomatoes and leave a smoother taste.

Make sure your prawns are defrosted in water with a dash of salt! Ten minutes may be a bit long for cooking!
