Ingredients
Cupcakes
- 140g Huletts Brown Sugar
- 140g flour
- 60g cocoa powder
- 2ml salt
- 5ml baking powder
- 5ml bicarbonate of soda
- 2 large eggs
- 85ml oil
- 125ml milk
- 125ml hot coffee
Icing
- 250g butter
- 400g Huletts Icing sugar
- 60g cocoa
- 125ml caramel treat
- 5ml vanilla essence
- 1ml salt
- Small sweets to fill the cupcakes
- Silver balls to decorate
Method
Cupcakes
- Preheat oven to 160°C.
- Place 18 cupcake liners into the holes of a muffin tin. Grease with non-stick spray. Set aside.
- In a mixing bowl, combine the sugar, flour, cocoa powder, salt, baking powder, and bicarbonate of soda. Mix well.
- In a separate bowl, whisk together eggs, vegetable oil, and milk.
- With the mixer on low, pour the wet ingredients into the dry ingredients. Mix on low until evenly distributed.
- Pour the hot coffee into the batter gradually and mix until smooth.
- Divide the batter between the cupcake liners.
- Bake for 20 minutes. When a skewer inserted at the centre of the cupcake comes out cleanly, the cakes are baked.
- Remove from the oven and let cool completely on a wire rack.
Icing
- Cream the butter and sugar together until light and smooth.
- Add the cocoa, caramel treat, vanilla and salt.
- Continue beating until smooth and creamy.
- Place into a piping bag.
- Using a melon baller or teaspoon, carve a small hole into each cupcake. Fill with small sweets.
- Place a small piece of cake back on top and then decorate with the icing.
- Sprinkle with silver balls and place a cake topper in each one.
