Gemer (ginger beer) is often prepared ahead of big Sesotho occasions and served together with dikuku (scones).

Ingredients
Gemer (Ginger Beer)
- 2L Water
- 2 Tbsp Ginger Powder
- 1 Cup Huletts SunSweet Brown Sugar/Huletts Treacle/Huletts White Sugar (Depending on preference)
- 1 tsp Cream of Tartar
- 100g Raisins
- 1 Pineapple Skin
- 50g Fresh Ginger
- 5ml Instant Yeast
Scones (Dikuku)
- 3 ½ Cups Flour
- ¼ tsp Salt
- 3 tsp Baking Powder
- ⅓ Cup Huletts White Sugar
- 1 ¼ Cups Fresh Cream
- 2 Eggs
- 65g Butter

Method
Gemer (Ginger Beer)
- In a pot dissolve the sugar with 2 cups of water.
- Simmer the ginger, raisins, cream of tartar, pineapple skin and the rest of the water.
- Allow the pot to cool for an hour and add the yeast.
- Leave to stand overnight.
- Strain into a bottle and chill before serving.
Dikuku (Scones)
- Preheat the oven to 180°C and grease an oven tray.
- In a large bowl, sift flour, salt and baking powder.
- Using your hands, rub the butter in the flour and add sugar.
- Beat the egg and cream together and make a well in the centre to add the cream mixture. Mix with a knife, being careful not to over-mix.
- Pat out the dough on a floured surface to a thickness of 2cm and use a cookie cutter to cut into rounds. Lightly egg-wash.
- Place on the greased baking tray and bake for 10-12 minutes.
