Melt-in-your-mouth Malva Pudding – A South African favourite all year round! Warm, delicious and absolutely moreish!

Ingredients
Pudding
- 125ml Huletts Treacle Sugar
- 1 egg
- 15ml apricot jam
- 250ml flour
- 5ml baking powder
- 3ml salt
- 5ml bicarbonate of soda
- 250ml milk
Syrup
- 60ml butter
- 60ml Huletts Castor Sugar
- 125ml boiling water
- 125ml cream
- Pinch of salt
Brandy Cream
- 250ml Butter
- 250ml Huletts Icing Sugar
- 60ml Brandy or 3-5ml rum essence
Method
Pudding
- Preheat the oven to 180°C.
- Whisk together the sugar and the egg until they are fluffy and turn lighter in colour. Add the jam, flour, baking powder and salt, and stir in until blended.
- Pour in the milk, sprinkle it over the bicarb, and quickly whisk it together. Pour the batter into a greased baking dish, cover with the lid or foil and bake for about 40 minutes until golden brown and a skewer inserted in the middle comes out clean.
Syrup
- Melt the ingredients in a saucepan. Do not allow to boil but gently heat through.
- Once the pudding is removed from the oven, pour over this sauce allowing it to soak through thoroughly.
- Serve with Custard or Brandy Cream see below.
Brandy Cream
- Cream the butter and icing sugar until the mixture is light and fluffy.
- Add the brandy or essence and beat until well combined.
- Chill and serve with the Malva Pudding
