Avoid bacteria buildup on your cutting board. Cut a lemon in half and coat the exposed side with coarse salt. Then, use it to scrub your cutting board and rinse clean.
Orange Glazed Chicken and Couscous

Ingredients
Chicken:
- 6 - 8 chicken thighs, with skin
- salt and ground black pepper
- 30 ml (2 T) olive oil
- 15 ml (1 T) lemon juice
- 30 ml (2 T) orange juice
- 6 cloves of garlic, peeled
- 15 ml (1 T) Huletts Molasses
- grated peel of 2 oranges
- 30 ml (2 T) olive oil
- a handful of oregano leaves, to serve
Couscous:
- 500 ml (2 cups) couscous
- 500 ml (2 cups) hot chicken stock
- 3 spring onions, sliced diagonally
- 3 oranges, segmented
- 250 ml (1 cup) Orange and Sesame Seed Dressing (see page 57)
Method
- Preheat the oven to 180°C.
- Chicken: Heat the oil in a large frying pan on medium to high heat. Season the chicken pieces with salt and pepper. Place the chicken, skin side down, in the pan and fry for 5 - 7 minutes on each side until golden brown. Place in a roasting tin.
- Combine the lemon and orange juice, garlic, molasses, orange peel and olive oil.
- Pour the marinade over the chicken and roast for 40 minutes.
- Couscous: Place the couscous in a bowl and add the stock. Cover and set aside for 20 minutes.
- Add the spring onions, orange segments and dressing to the couscous and toss through using a fork.
- Sprinkle the chicken with the oregano leaves and serve with the couscous salad.
