Ingredients
Oven Roasted Salmon Fillets with Spicy-Sweet Marinade
- 1 Tbsp olive oil
- 50 g melted salted butter
- 1 tsp Huletts Caramel Sugar
- 1 tsp Huletts Yellow Sugar
- 1 Tbsp freshly squeezed lemon juice
- 1 tsp soy sauce
- 1 tsp dry parsley
- ½ tsp oregano
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp chili flakes
- 1 tsp salt
- 1 tsp ground black pepper
- 500 g salmon fillets
- 200 g cocktail tomatoes, halved

Method
Marinade
- Mix melted butter, caramel sugar, yellow sugar, lemon juice, soy sauce, parsley, oregano, smoked paprika, garlic powder, chilli flakes, salt, and pepper in a small bowl.
Salmon
- Preheat your oven to 190°C. Then, line a baking tray with foil.
- Place the salmon fillets in a zip-lock bag and pour the marinade into the bag. Mix well to ensure the fillets are fully coated with the marinade. Leave them to marinate for at least 15-20 minutes. (See tip)
- Place the tomatoes on the lined baking tray, drizzle with olive oil, and season with salt and pepper.
- Remove the marinated salmon fillets from the bag and place them on the baking tray. Place the baking tray in the oven and roast for 12-15 minutes or until the salmon flakes easily with a fork.
- Garnish with fresh herbs and lemon wedges.
