Oven Roasted Salmon Fillets with Spicy-Sweet Marinade

Ingredients

Oven Roasted Salmon Fillets with Spicy-Sweet Marinade

  • 1 Tbsp olive oil
  • 50 g melted salted butter
  • 1 tsp Huletts Caramel Sugar
  • 1 tsp Huletts Yellow Sugar
  • 1 Tbsp freshly squeezed lemon juice
  • 1 tsp soy sauce
  • 1 tsp dry parsley
  • ½ tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 500 g salmon fillets
  • 200 g cocktail tomatoes, halved

Method

Marinade

  1. Mix melted butter, caramel sugar, yellow sugar, lemon juice, soy sauce, parsley, oregano, smoked paprika, garlic powder, chilli flakes, salt, and pepper in a small bowl.

Salmon

  1. Preheat your oven to 190°C. Then, line a baking tray with foil.
  2. Place the salmon fillets in a zip-lock bag and pour the marinade into the bag. Mix well to ensure the fillets are fully coated with the marinade. Leave them to marinate for at least 15-20 minutes. (See tip)
  3. Place the tomatoes on the lined baking tray, drizzle with olive oil, and season with salt and pepper.
  4. Remove the marinated salmon fillets from the bag and place them on the baking tray. Place the baking tray in the oven and roast for 12-15 minutes or until the salmon flakes easily with a fork.
  5. Garnish with fresh herbs and lemon wedges.
