Pork Belly Bites with Sticky Asian Glaze

Ingredients

  • 1.5 kg pork belly, skin removed, fat trimmed
  • 1 knob fresh ginger, sliced
  • 2 cloves garlic, peeled and crushed
  • 4 star anise pods
  • 1 bunch green onions, roughly chopped
  • 2 Tbsp sesame seed oil
  • ¼ cup Huletts SunSweet Brown Sugar
  • ½ cup light soy sauce
  • 3 Tbsp dark soy sauce
  • 2 Tbsp apple cider vinegar, balsamic vinegar or brown vinegar
  • 1 tsp ground allspice
  • 1 cup water + water to poach pork in
  • 4 green onions, sliced, for garnish
  • 2 Tbsp sesame seeds, lightly roasted

Method

  1. Place the pork belly, ginger, garlic, ​​star anise, allspice, and green onion in a large heavy-based stock pot. Add enough water to just cover the pork.
  2. Over high heat, bring the mixture to a boil. Once boiling, allow the pork to cook for 50 minutes.
  3. Remove the pork with a slotted spoon.
  4. Once the pork belly is cool enough to handle, cut it into equal bite-size pieces.
  5. Heat sesame seed oil in a heavy-based saucepan, then add the drained pork pieces. Cook, turning the pork occasionally, until the pork is browned on all sides.
  6. Remove pork from pan and allow to rest.
  7. Next, reduce the heat to low and add the brown sugar. The brown sugar will melt and caramelise.
  8. Add both the light and dark soy sauces, and your choice of vinegar. Stir until the liquids combine with the brown sugar.
  9. Finally, add one cup of water and stir well. Cover the pot and simmer for 10 minutes until the glaze thickens.
  10. Coat each piece of pork belly with the glaze.
  11. Garnish with chopped spring onions and roasted sesame seeds.
