Ingredients
- 700 g beef fillet
- Salt and pepper to taste
- 6 tea bags of Rooibos tea
- 250 ml uncooked rice
- 1 Tbsp fennel seeds
- 1 Tbsp dried rosemary
- ½ Tbsp star anise
- 1 cinnamon quill
- 5 cardamom pods
- 125ml Huletts SunSweet Brown Sugar
Method
- Season the fillet with salt and pepper and set aside.
- In a bowl combine the remaining ingredients until needed. Line a wok with foil and evenly spread the tea mixture and place a wire rack over it.
- Cover the wok with a lid or foil and heat over medium heat for 12-15 minutes until the mixture begins to start smoking. Place the meat on the wire rack, cover and continue smoking to your desired doneness.
- Remove and allow to rest before slicing and serving.
