Rooibos Smoked Meaty Fillet

Ingredients

  • 700 g beef fillet
  • Salt and pepper to taste
  • 6 tea bags of Rooibos tea
  • 250 ml uncooked rice
  • 1 Tbsp fennel seeds
  • 1 Tbsp dried rosemary
  • ½ Tbsp star anise
  • 1 cinnamon quill
  • 5 cardamom pods
  • 125ml Huletts SunSweet Brown Sugar

Method

  1. Season the fillet with salt and pepper and set aside.
  2. In a bowl combine the remaining ingredients until needed. Line a wok with foil and evenly spread the tea mixture and place a wire rack over it.
  3. Cover the wok with a lid or foil and heat over medium heat for 12-15 minutes until the mixture begins to start smoking. Place the meat on the wire rack, cover and continue smoking to your desired doneness.
  4. Remove and allow to rest before slicing and serving.

Serving Suggestions

Serve sliced meat with accompanying sides, salsa, and sauce.
Thinly slice meat and use it to make a salad-filled sandwich or pita.
