Ingredients

Sweet Potato Soup

  • 2 Tbsp olive oil
  • 1 medium-sized onion, diced
  • 3 carrots, sliced
  • 2 garlic cloves, crushed or grated
  • 1 Tbsp fresh ginger, finely grated
  • ¼ tsp chilli flakes
  • ¼ tsp turmeric powder
  • ¼ tsp smoked paprika (or normal paprika)
  • 600-700 g sweet potatoes, peeled and diced (preferably the orange variety)
  • 1L vegetable stock or more for thinner consistency
  • 50 ml cream or coconut milk

Caramelised Onions

  • 1 large onion, sliced into rings
  • 30 ml Huletts White Sugar
  • 2 ml salt
  • 15 ml butter

Method

Sweet Potato Soup

  1. Heat the oil in a large stock pot on medium-high heat. Add the onion and carrots and cook until onions have caramelised, and the carrots have softened.
  2. Add the garlic, ginger, red chilli flakes, turmeric, and paprika. Stir for 2-3 minutes or until fragrant.
  3. Add the diced sweet potato and vegetable stock. Turn the heat to high and bring to a boil. Then reduce the heat to low, add a lid, and simmer for 15-20 minutes, or until the sweet potato is fork tender.
  4. Using a stick blender, blend on high speed until thick & creamy. Add more vegetable stock, coconut milk, or cream for a thinner consistency.
  5. Serve with caramelised onion rings and rustic bread.

Caramelised Onions

  1. Heat a heavy-based pan and melt butter.
  2. Add onions and cook until golden brown.
  3. Add white sugar and cook until onions are caramelised.
  4. Drain off any excess butter.
  5. Store in a sterilised glass jar.
