Sweet Potato Soup with Caramelised Onions

Ingredients
Sweet Potato Soup
- 2 Tbsp olive oil
- 1 medium-sized onion, diced
- 3 carrots, sliced
- 2 garlic cloves, crushed or grated
- 1 Tbsp fresh ginger, finely grated
- ¼ tsp chilli flakes
- ¼ tsp turmeric powder
- ¼ tsp smoked paprika (or normal paprika)
- 600-700 g sweet potatoes, peeled and diced (preferably the orange variety)
- 1L vegetable stock or more for thinner consistency
- 50 ml cream or coconut milk
Caramelised Onions
- 1 large onion, sliced into rings
- 30 ml Huletts White Sugar
- 2 ml salt
- 15 ml butter

Method
Sweet Potato Soup
- Heat the oil in a large stock pot on medium-high heat. Add the onion and carrots and cook until onions have caramelised, and the carrots have softened.
- Add the garlic, ginger, red chilli flakes, turmeric, and paprika. Stir for 2-3 minutes or until fragrant.
- Add the diced sweet potato and vegetable stock. Turn the heat to high and bring to a boil. Then reduce the heat to low, add a lid, and simmer for 15-20 minutes, or until the sweet potato is fork tender.
- Using a stick blender, blend on high speed until thick & creamy. Add more vegetable stock, coconut milk, or cream for a thinner consistency.
- Serve with caramelised onion rings and rustic bread.
Caramelised Onions
- Heat a heavy-based pan and melt butter.
- Add onions and cook until golden brown.
- Add white sugar and cook until onions are caramelised.
- Drain off any excess butter.
- Store in a sterilised glass jar.
