Thophi

The Sweetest of Venda Traditions. Thophi is a green squash porridge that is often eaten for breakfast.

Ingredients

  • 600g Green Squash (Traditional Squash) can be substituted with pumpkin
  • 1 Cup Maize Meal
  • ½ Cup Huletts White Sugar (Optional: Huletts Caramel Sugar for a caramel flavour)
  • ½ tsp Salt Cinnamon Powder for Sprinkling (optional)

Method

  1. Peel off the skin – the inside must be yellow.
  2. Remove all the seeds.
  3. Cut into 2cm cubes.
  4. Place a large pot on the stove and add the water (ensure the water is cold so that the squash will cook thoroughly).
  5. Add in the squash.
  6. Add a pinch of salt.
  7. Leave it to boil (You can add a bit of water if it is cooking too dry).
  8. Once the squash is soft you can mash it making sure there are no lumps.
  9. Once mashed, add maize meal and fold it in using a wooden spoon.
  10. Let it cook for a few minutes until soft and keep stirring to prevent it from burning.
  11. Fold in the sugar.
  12. If it is too stiff, you can add in a little bit of water to give it a porridge consistency.
