Ingredients
- 3 Cups Wholewheat Flour
- 1 cup Oat Flour
- 12g instant dried yeast
- 4 Sachets Huletts Equisweet
- 1 Cup Luke Warm Water
- 1 Cup Low Fat Yoghurt
- 1 tablespoon oil
- 1 teaspoon salt
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- ¼ cup chia seeds
- ¼ cup poppyseeds
- ¼ cup Linseeds
Method
- Mix the flours with the seeds, yeast & Equisweet in a large mixing bowl.
- Add the water, yoghurt and oil (saving some oil to grease the proofing bowl & loaf tin) and mix until it starts to come together but isn't overly sticky. Knead for 6-7minutes or until the dough starts to feel elastic.
- Oil a large bowl and shape the dough into a ball and cover with cling film Place in a warm, sunny area. Allow to rise until double in size for 1 hour.
- Line a large loaf tin with baking paper and grease.
- Knock back the dough, kneading the air out and add the salt in, knead for a few more minutes and then roll into a ball and shape the dough to fit into the prepared loaf tin. Cover with cling film and allow to rise again for around 30 to 45 minutes.
- Preheat the oven to 200C.
- Bake for 45 minutes.
- Cool in the tin for 10 minutes and then remove, slice and serve.

- One slice is equivalent to: 1.5 portion Starch + 1 portion Protein + 1 portion fat.
- GI (calculated) = 60 (intermediate GI). GL per slice = 13
