Ingredients

  • 3 Cups Wholewheat Flour
  • 1 cup Oat Flour
  • 12g instant dried yeast
  • 4 Sachets Huletts Equisweet
  • 1 Cup Luke Warm Water
  • 1 Cup Low Fat Yoghurt
  • 1 tablespoon oil
  • 1 teaspoon salt
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup chia seeds
  • ¼ cup poppyseeds
  • ¼ cup Linseeds

Method

  1. Mix the flours with the seeds, yeast & Equisweet in a large mixing bowl.
  2. Add the water, yoghurt and oil (saving some oil to grease the proofing bowl & loaf tin) and mix until it starts to come together but isn't overly sticky. Knead for 6-7minutes or until the dough starts to feel elastic.
  3. Oil a large bowl and shape the dough into a ball and cover with cling film Place in a warm, sunny area. Allow to rise until double in size for 1 hour.
  4. Line a large loaf tin with baking paper and grease.
  5. Knock back the dough, kneading the air out and add the salt in, knead for a few more minutes and then roll into a ball and shape the dough to fit into the prepared loaf tin. Cover with cling film and allow to rise again for around 30 to 45 minutes.
  6. Preheat the oven to 200C.
  7. Bake for 45 minutes.
  8. Cool in the tin for 10 minutes and then remove, slice and serve.

Additional information

  1. One slice is equivalent to: 1.5 portion Starch + 1 portion Protein + 1 portion fat.
  2. GI (calculated) = 60 (intermediate GI). GL per slice = 13
