Zesty Citrus Drizzle Cake

Ingredients
- 175 g unsalted butter, softened, plus extra for tin(s)
- 175 g Huletts Castor Sugar
- A pinch of sea salt
- 4 clementines or 3 oranges, finely grated zest
- 1 tsp ground cinnamon
- 3 eggs, beaten
- 175 g self-raising flour (sifted)
- 6 - 12 thin slices of peeled clementine or orange (skin on)
- 100 ml freshly squeezed orange or clementine juice
- 100 ml Huletts Golden Syrup
Method
Cake
- Preheat the oven to 180°C.
- Grease a loaf tin or bundt tin with butter and dust with cake flour to prevent sticking.
- Arrange some of the citrus slices onto the base of your baking tin.
- Place butter, sugar, salt, and zest in a large bowl. Beat for 5 mins, till pale, light and fluffy.
- Whisk in eggs, one at a time. Beat until well combined.
- Fold in the remaining flour, the mix will look thick.
- Spoon into the prepared tin. Arrange citrus slices on the top, along the centre.
- Bake for 40-45 mins for a single cake or pierce the centre of the cake with a skewer to check doneness.
- Turn the oven off and allow the cake to rest inside the oven for 10 mins.
- Remove from the oven. Pierce all over with a skewer to allow syrup to soak up.
Syrup Drizzle
- In a heavy-based saucepan, mix juice and syrup together.
- Allow to reduce slightly.
- Drizzle over the cake, slowly, waiting for it to sink in before adding more.
- Remove from the baking tin and transfer to a wire rack to cool.
