Zesty Citrus Drizzle Cake

Ingredients

  • 175 g unsalted butter, softened, plus extra for tin(s)
  • 175 g Huletts Castor Sugar
  • A pinch of sea salt
  • 4 clementines or 3 oranges, finely grated zest
  • 1 tsp ground cinnamon
  • 3 eggs, beaten
  • 175 g self-raising flour (sifted)
  • 6 - 12 thin slices of peeled clementine or orange (skin on)
  • 100 ml freshly squeezed orange or clementine juice
  • 100 ml Huletts Golden Syrup

Method

Cake

  1. Preheat the oven to 180°C.
  2. Grease a loaf tin or bundt tin with butter and dust with cake flour to prevent sticking.
  3. Arrange some of the citrus slices onto the base of your baking tin.
  4. Place butter, sugar, salt, and zest in a large bowl. Beat for 5 mins, till pale, light and fluffy.
  5. Whisk in eggs, one at a time. Beat until well combined.
  6. Fold in the remaining flour, the mix will look thick.
  7. Spoon into the prepared tin. Arrange citrus slices on the top, along the centre.
  8. Bake for 40-45 mins for a single cake or pierce the centre of the cake with a skewer to check doneness.
  9. Turn the oven off and allow the cake to rest inside the oven for 10 mins.
  10. Remove from the oven. Pierce all over with a skewer to allow syrup to soak up.

Syrup Drizzle

  1. In a heavy-based saucepan, mix juice and syrup together.
  2. Allow to reduce slightly.
  3. Drizzle over the cake, slowly, waiting for it to sink in before adding more.
  4. Remove from the baking tin and transfer to a wire rack to cool.
