Avoid bacteria buildup on your cutting board. Cut a lemon in half and coat the exposed side with coarse salt. Then, use it to scrub your cutting board and rinse clean.
Herby Garlic and Lemon Roast Turkey

Ingredients
HERBY GARLIC AND LEMON ROAST TURKEY
- 6 kg turkey (approximate size)
- 125 g butter, softened to room temperature
- 45 ml olive oil
- 60 ml Huletts Golden Syrup
- 45 ml assorted dried chopped herbs eg. basil, rosemary and parsley
- zest of 1 lemon, plus the lemon halved
- 30 ml salt
- 15 ml black pepper
- 1 clove of garlic, chopped
- 1/2 an onion, peeled and chopped in half
- 1 celery stalk, chopped into chunks
Method
- Remove the turkey from the refrigerator and leave it to reach room temperature.
- Preheat the oven to 220˚C.
- Stir the butter, olive oil, golden syrup, dried herbs and lemon zest together.
- Rinse the turkey under cold water and make sure the giblets have been removed. Place the turkey in a roasting pan and dry it by patting with paper towels. Make sure the turkey is dried thoroughly.
- Place your fingers under the skin of the breast, separating the skin from the flesh and making a space to fill with some of the butter mixture.
- Use some of the butter mixture to rub over the turkey. Then take the remainder of the butter mixture and stuff it under the skin.
- Sprinkle the salt and pepper evenly all over the turkey and inside the cavity.
- Stuff the turkey with the garlic, onion, celery and halved lemon. Tie the legs together with string, cover the wings with foil and place in the oven.
- Roast the turkey at 220˚C for 30 minutes, then turn the heat down to 180˚C, cover with foil and continue to cook for 2 hours. Take the turkey out after 2 hours and check to see that it is cooked through.
- Remove the foil for the last 30 minutes of roasting, checking to make sure the turkey is a golden brown colour.
